Made this today. Chicken breast meat loaf. I took 6 chicken breasts and ground them added 2 eggs and some ketchup and mixed it well then added bread crumbs till it reached the right consistency and rolled it then into the pan some coarse black pepper and ketchup and sriracha sauce 90 minutes in the oven and its done.
Our local supermarket often has turkey mince. I guess that recipe would work with turkey mince just as well as ground chicken. I will try it, but with a smaller quantity. You seem to have about four to six servings there.
I'll probably make one tomorrow, waiting for the bananas to darken and they are almost there. Tonight will be jumbo chorizo/sausage roll. Tomorrow probably cottage pie.
I have a banana loaf cooking right now as it happens. Different to my normal one. Not tried this before. https://www.itv.com/thismorning/articles/john-torodes-caramel-banana-bread
I shall let you know. It’s still in the oven for a few more minutes. As usual it is taking longer to cook than the recipe says.
Same here! I still think it could have had another 10 minutes, on the extra 10 minutes I gave it over the recipe. Mind you, I think mine was a wee bit moist. It said two large bananas but I had small ones (no comments please!) so I put in about three and a half. Anyway, it tastes nice. Difficult to cut though! A bit free and open.
Are you letting it cool properly? My routine is ten minutes in the tin on a wire rack then pop it out of the tin directly onto the rack. Despite these efforts, my wife usually manages to hack a chunk off as soon as it's out of the tin.
Tried the link but instead of banana loaf it just offered cookies. I wanted to select cookies so it took me to another page but the popup was on top and only allowed acceptance. So cookieless and recipeless I navigated away.
Perhaps I filled the loaf tin a bit too much. Must get a bigger tin. It is very nice, the walnuts make a difference. It is sweet, but not as sweet as I expected considering all of the sugar in there. Banana loaf by Nigel G, on Flickr
