    I usually desaturate my colour images when producing B&W photos, because I think (Haven't any actual proof to back this up, though!) the variation of greys seem to be greater and since the RGB data is still present, I can use this to apply monochrome lens filter effects and tints, to maintain the 'feel' of old engravings, as shown below:
