There's like a billion cameras in the Fuji mirror-less, exchangeable lens range. Is there a handy website which compares them, or even summarises what the major models are about?

I kept looking for one of those. Never found one.

As far as I could make out for the "E"'s and "T"'s, the "T" has the viewfinder over the lens and a pop-out screen, the "E" has the viewfinder far left and fixed screen.

If you want a viewfinder you need an E or a T, or a Pro.
Then it is down to other factors. there are 16mp cameras and the newer 24mp ranges. X-T1 is 16mp in a larger more pro body with DSLR shape, the X-T2 is the newer 24mp version. X-T10/20 are more compact and not weather sealed to the same degree. X-E1 is original 16mp with viewfinder at the left, X-E2 and variants are a mark 2 version to all intents and purposes, the not yet available X-E3 is the 24mp variant. The X-Pro1/2 follow a similar path pixel wise, but also have a hybrid optical/electronic viewfinder and look like a rangefinder camera, the optical viewfinder only functions up to 60mm though, from there-on it is electronic only. There are variations on tilting screens as well!
