Does anyone know of any remotes (I'd imagine third party if they exist), that let you alter settings such as shutter speed?

If you've got a D300, D700 or a D3, you can use the WT-4 Wireless adapter to control and operate the camera (you also need Nikon Camera Control Pro, IIRC) which lets you run the camera remotely over a wireless link. I've used it for nature photography where, handsome though I am, the subjects tend to take fright and bugger off if I'm around...

I've only got a D80. It just struck me that if I was using a long lens, and wanted to take more than 3 shots to combine for some HDR shenanigans, then having the control on a remote would be better than using the thumbwheel.

Does the D80 have a exposure bracketing?
If it does you could set the camera up to take several photos at different exposures and then press the remote.

I had the D80 and it does have the bracketing,can,t remember the number though ,so you,ll have to look it up.

There's always Nikon's Camera Control Pro software. It's pretty fun to play with actually.

The D80 Bracketing button is on the front just below the flash button press it and you can alter all the settings with the thumb wheels
