I have Martin Evening's The Adobe Photoshop Lightroom Book: The Complete Guide for Photographers which I can recommend. I bought it when there wasn't much competition so there may be others now. Also check whether it has been updated with the extra functionality as Lightroom has been updated.

I usually don't get on with software self-help books but this one is refreshingly different enough for me to recommend it.
